  • 1 cup red lentils

  • 1 can chopped tomatoes
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt to taste

Method
 

  1. Sauté onion, garlic, and ginger in olive oil.
  2. Add spices and toast briefly.
  3. Add lentils, carrot, tomatoes, and broth.
  4. Simmer 20–25 min until soft.
  5. Blend slightly if you want a creamy texture.
